   Happy Diwali   

Ingredients:

For Marination:

  • Raw mango - 2 Nos(big sized) / 5 cups (diced)
  • Kashmiri chilly powder - 2 Tablespoon
  • Turmeric powder - ½ Teaspoon
  • Salt to taste

For Masala:

  • Garlic - 2 Tablespoon, sliced
  • Ginger - 2 Tablespoon, julienned
  • Green chillies - 3-4, sliced
  • Red chilly powder - 2 Tablespoon
  • Curry leaves - 1 sprig
  • Mustard seeds - 2 Teaspoon
  • Fenugreek powder - ¼ Teaspoon
  • Asafoetida/Hing - ¼ Teaspoon
  • Vinegar - 1 Tablespoon
  • Gingelly oil - 4-5 Tablespoon
Instructions:
  1. In a bowl add diced mangoes, kashmiri chilly powder, turmeric powder and salt; Mix well and set aside for an hour.
  2. Heat oil in a pan, splutter mustard seeds.
  3. Then add curry leaves, sliced garlic, julienne ginger and sliced green chillies and saute till the raw smell disappears.
  4. Now add the red chilly powder, fry for 1 minute over low flame.
  5. Then add fenugreek powder and asafoetida powder sauté for few seconds over low flame.
  6. Add the marinated mango pieces. Pour ¼ cup of water. Mix well and cook for 2 minutes.
  7. Remove from flame, add vinegar; Mix well and allow to cool completely.
