Mushroom Roast

   Happy Diwali   

Ingredients:
  • Mushroom - 250 Gms
  • Onion, medium sized - 2 Nos, chopped or sliced
  • Chopped Ginger - 1 ½ Teaspoon
  • Chopped Garlic - 2 Teaspoon
  • Tomato, large sized - 1 Nos, chopped
  • Finley chopped Capsicum - 2 Tablespoon, optional
  • Kashmiri Red chilli powder- 1 ½ Teaspoon
  • Turmeric Powder - ¼ Teaspoon
  • Garam masala - ¾ Teaspoon
  • Curry leaves- 1 sprig
  • Chopped Coriander leaves - 1 Tablespoon
  • Coconut Oil - 2 Tablespoon
  • Salt to taste
Instructions:
  1. Clean and cut the mushrooms into small pieces.
  2. Heat oil in a pan, add in the chopped onions, curry leaves and saute until light brown.
  3. Add in the ginger, garlic and saute for 2-3 minutes on low heat.
  4. Now add in the chopped tomatoes and saute until the tomatoes are mashed well. Add in the chopped capsicum at this stage, if using.
  5. Add in the turmeric powder, chilli powder, garam masala and saute for a minute or two on low-medium heat.
  6. Add the mushroom pieces, salt and stir for 1-2 minutes on medium heat. Cover and cook for 6-8 minutes or till the mushroom is cooked well on medium heat. No need to add water as water will ooze out of mushroom.
  7. Open the lid, saute until the water content evaporates completely on low heat.
  8. Add chopped coriander leaves and give a stir.
  9. Remove from heat and serve hot.
